carrot cake

recipe makes 2 6 in cakes and cupcakes

1/2c nuts of your choice

2/3c mixed dried fruits +raisins

3c grated carrots

1 3/4c flour

1 tsp baking soda

1 1/2 tsp baking powder

1 1/2 tsp cinnamon

3 egg

1c sugar

3/4c oil

1tsp vavnilla

Cream Cheese Frosting:

57g butter softened

227g cream cheese softned

1/2cup icing sugar sifted

2tsp lemon juice

2 tbsp lemon zest

180C. Peel and grate carrots.

Beat eggs until frothy, add sugar, beat. Add oil beat. Beat in vanilla. Sift in dry ingredients, mix. Fold in grated carrots, nuts, dried fruits.

Bake for 25-30minutes. Cool

Frosting:

Beat butter and cream cheese until smooth, sift in icing sugar. Mix in zest and juice.

Spread on one layer of cooled cake. Top with other cooled cake. Spreadfrosting on top.
