chocolate hazelnut macarons

recipe: makes around 12 mini macarons
25g egg whites
15g sugar
40g icing sugar
30g ground almond
5g cocoa powder
Hazelnut paste
Beat egg until foamy, add sugar, beat until stiff
Mix icing sugar, cocoa, ground almonds.
Fold it into egg mixture. Pipe with piping bag into small circles on baking tray with baking paper
Use hair dryer to blow at them until skin forms (no longer sticky)
Bake at 170C for 5 min then 120C for 10min.
Cool.
Spread hazelnut paste, sandwich.
